Ingredients

  • 4 tbsp. unsalted butter
  • 1 tbsp. olive oil
  • 1/2 onion chopped
  • 1 lb Cremini or button mushrooms
  • 2 tbsp. dry white wine (optional)
  • 1 tsp fresh thyme leaves chopped
  • 2 tbsp. chopped fresh parsley
  • 4 cloves garlic minced
  • salt and pepper to taste

Preparation

Step 1

heat butter and oil in a large pan or skillet over medium heat
saute the onion until softened (about 3 minutes)
add mushrooms and cook for about 4 - 5 minutes until golden and crispy on the edges
stir in thyme, 1 tbsp. of parsley and garlic. cook for a further 30 seconds until fragrent
season generously with salt and pepper to your taste
sprinkle with remaining parsley and serve warm

Note: use a good quality dry white wine such as a pinot gris, chardonnay or a sauv blanc
