Ingredients

  • 5 cups zucchini, peeled and chopped
  • 1/3 cup sugar
  • 1 tsp cinnamon
  • 1/4 cup lemon juice
  • 3/4 cup water
  • 1/3 cup butter or margarine
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp baking powder

Preparation

Step 1

In medium saucepan combine zucchini, sugar, cinnamon, lemon juice and water. Bring to a boil; reduce heat and simmer 10 minutes. Pour mixture into a greased 7-by-11-inch baking pan. In a small bowl mix together butter, flour, brown sugar, salt and baking powder until crumbly. Sprinkle mixture over zucchini. Bake at 350 F oven for 45 minutes. Serve warm or cool, topped with ice cream, whipped cream or light cream.
