Ingredients

  • 1 1/2 pounds mixed unsalted shelled nuts
  • 3 tablespoon minced fresh rosemary
  • 1 tablespoon sugar
  • 1 tablespoon sea or kosher salt
  • 2 teaspoons garlic powder
  • 3/4 teaspoon cayenne
  • 3 tablespoons melted unsalted butter

Step 1

1. Preheat oven to 350°F. Arrange nuts in one layer on a jelly-roll pan or baking sheet. Roast in the oven for 10 minutes.
2. Meanwhile, in a large bowl combine the rosemary, sugar, salt, garlic powder and cayenne. Transfer nuts to the bowl, add the butter and toss to coat with the spices. Return nuts to the baking sheet and roast for 10 minutes more. Store in airtight containers for up to two weeks.
Yield: about 3 cups
