Ingredients
- 4 cups (1 lb.) shelled walnuts
- 1 stick unsalted butter
- 2 egg whites, room temperature
- Salt
- 1 cup sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla extract

Step 1
Preheat oven to 350° F. Spread nuts on large baking sheet; toast until fragrant, about 12 min. Set aside. Place butter in large roasting pan and melt in oven. Remove and let stand. In large bowl beat egg whites and pinch of salt with electric mixer until soft
peaks form. Beat in sugar, a little at a time, until stiff peaks form; fold in cinnamon and vanilla. Gently fold in nuts. Spread
in pan with butter stirring gently. Bake until crispy meringue forms, about 30 min. Cool; break apart and serve.
