  • 50 ml unsalted butter 4 tbsp
  • 1 kg potatoes, peeled & thinly sliced 2 lbs
  • 5 ml salt 1 tsp
  • 1 ml pepper 1/4 tsp

Step 1



In a large skillet set over medium-high heat; saute onion in 3 tablespoon (45 ml) butter, stirring occasionally until golden brown; about 10 to 12 minutes.
Melt the remaining 1 tablespoon (15 ml) butter in a medium cast-iron skillet set over medium-high heat. Arrange a single layer of potato slices in concentric circles, overlapping them slightly, over the bottom of the skillet. Sprinkle potatoes with salt and pepper. Spread one third cooked onions on top of potatoes. Repeat, layering the potatoes, salt, pepper and onion until you have 3 layers of onions and 4 of potatoes.

Increase the heat to high and cook until the bottom layer of potatoes is golden brown, about 5 minutes. Check by picking up the edge of the potatoes with a metal spatula. When the bottom layer is browned, remove skillet from heat and tightly cover the pan with aluminum foil.

Bake in preheated 350 F (180 C) oven until the potatoes are tender when stabbed with the tip of a sharp knife, about 45 minutes.

Remove skillet to a wire rack, uncover and let cool and set slightly, 10 to 15 minutes.
