Easy Muffins

This is a quick and easy muffin that you can make up, cool, package and freeze. I always suggest that you put a serving for you or your family in a Ziploc bag and freeze. Then all you have to do is pull out your muffin bag, defrost or drop in a lunch bag, and eat when hungry. Make a big batch for a rainy day.

Ingredients

  • 2 cups lite pancake mix
  • 1 tsp cinnamon
  • 1/3 cup powdered fructose (or sugar)
  • 1/2 cup applesauce
  • 2 egg whites
  • 3/4 cup skim milk
  • 2 tbsp canola oil

Preparation

Step 1

Place dry ingredients in a bowl and mix. Add wet ingredients and mix. Do not beat the batter. Spoon into muffin tin that has been sprayed with vegetable food spray. Bake in a 350 oven 25 minutes or until browned on top.
