Ingredients
- Crust:
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 3 tablespoons cole butter
- 3 tablespoons shortening
- 1/4 cup milk
- Filling
- 1 can (14 3/4oz) slamon, drained, bones and skin removed
- 1 cup (4oz) shredded cheddar cheese
- 1/4 cup chopped green pepper
- 1/4 cup chopped onion
- 1 tablespoon all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3 eggs, beaten
- 1 1/4 cup milk

Preparation
Step 1
Crust:
In a bowl, combine dlour and salt; cut in butter adn shortening until crumbly. Stir in milk. Roll into 10 inch circle. ***Transfer to ungreased 9 inch pie plate or quiche dish. Bake at 350 degrees for 10 minutes.
Filling:
In a bowl, combine salmon, cheese, grated pepper, onion, flour, salt and pepper; spoon into crust. Combine eggs and milk; pour over salmon mixture. Bake at 350 degrees for 50-55 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting.
