Ingredients

  • 6 eggs yolks
  • 1 cup fine sugar
  • 1 tbsp lemon juice
  • 6 egg whites
  • 1/4 tsp salt
  • 7/8 cup all purpose flour or 1 cup pastry flour

Step 1

Beat egg yolks until thick and lemon colored. Beat in, a little at a time, half of the sugar. Add lemon juice and rind. Beat egg whites until frothy, add salt, beat until stiff and gradually sprinkle in second half of sugar beating after each addition. Alternate egg white mixture and flour. Cut and fold these ingredients in lightly with smooth stroking motion, and as few strokes as possible. Bake in an ungreased tube pan in 325 oven 40 to 60 minutes.
