Ingredients

  • 1 large onion, diced
  • 2 cloves, garlic
  • 1 pound boneless, skinless chicken breasts, cut into 2-inch pieces
  • 2 (15 ounce) cans cannellini beans, drained and rinsed
  • 1/2 - 3/4 cup green jalapeno chilies (tin), chopped into small pieces
  • 1 (14.5 ounce) can chicken broth or water and 2 OXO cubes
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • cheese, sour cream, chopped tomatoes, cilantro (optional, for serving)

Preparation

Step 1

Add everything to slow cooker and give it a stir. Cook on low for 7-8 hours or high 3-4 hours. Serve nice and steamy with rice and topped with cheese, sour cream, tomatoes or cilantro if you like.
