Ingredients

  • 16 cups tomatoes
  • 12 ounces jalapeno peppers
  • 3/4 cup sugar
  • 1/4 cup salt
  • 4 cups coarsely chopped onion
  • 5 cups coarsely chopped green pepper
  • 2 1/2 cups vinegar
  • 1 Tbsp. finely chopped garlic
  • 1 Tbsp. black pepper
  • 2 Tbsp. cumin
  • 1 tsp. powdered alum
  • 2 Tbsp. chili powder
  • 1 (12 oz.) can tomato paste

Step 1

Cook uncovered for 1 ½ hours, add the tomato paste during the last 10 minutes of cooking. Put into jars and seal. If you want a milder sauce, reduce the amount of jalapeno peppers.
