Ingredients

  • 4 (4-oz.) boneless skinless chicken breast halves
  • Black pepper, to taste
  • Water/oil mixture
  • 1 medium onion, thinly sliced
  • 1/2 cup balsamic vinegar
  • 1 (14.5 ounce) can no salt added diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme

Preparation

Step 1

Season chicken breast halves with black pepper. Coat a large skillet with water/oil mixture and place over medium-high heat; brown onion and seasoned chicken. Pour balsamic vinegar and tomatoes over chicken and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink in the center and juices run clear, about 15 minutes.

SERVING SUGGESTION: Steamed red skinned potatoes and a big salad tossed with Easy Balsamic Vinaigrette (see recipe).
