Ingredients
- 8 whole cloves
- 8 whole peppercorns
- 4 whole allspice berries
- 1-3 inch cinnamon stick
- 1/4 tsp mustard seeds
- 10 pounds ripe roma tomatoes, cored and quartered
- 2 clove garlic, peeled and crushed
- 1/3 cup cider vinegar
- 1 tbsp brown sugar
- 1 tbsp fresh lemon juice

Step 1
Tie the first five ingredients in a piece of cheesecloth to make a bag. Place it in a heavy, large, nonreactive pot with tomatoes, onions, and garlic. Bring to a boil, reduce the heat to medium and simmer for one hour, stirring occasionally.
Strain through a sieve in small batches, pressing down with a spoon to extract the liquid; discard skins. Return the liquid and spice bag to pot; add the vinegar and brown sugar. Simmer uncovered for two hours, stirring occasionally.
Cool mixture slightly. Puree in a food processor. Add lemon juice and salt.
Will keep for 3 weeks or process in water bath.
