Ingredients
- 3 pounds chicken pieces
- 4 tbs olive oil
- 1 pound mushrooms, sliced
- 3 tbs parsley
- 1 tsp crushed garlic
- 1/4 tsp thyme
- 14 ounce can of artichoke hearts
- 7 ounce can of black olives, whole
- 1 1/2 cups chicken broth
- 1/4 cup white wine
- 1 can tomato paste
- 1/2 cup flour
- 1 1/2 tsp salt
- 1/4 tsp pepper

Preparation
Step 1
Coat chicken with flour, salt & pepper. Brown in oil. Remove. Add mushrooms, garlic, parsley & thyme. Saute until tender. Add artichoke hearts and olives. Return chicken to pan. Mix broth, tomato paste and wine. Pour over chicken and simmer covered for 40 minutes or until chicken is done.
