A simple hummus with a hint of red bell pepper

  • 1- 15oz can garbanzo beans
  • 2 large cloves garlic
  • kosher salt
  • 1/4 cup fresh lemon juice
  • 2 Tbl. sesame (tahini) paste
  • 1 tbl. olive oil
  • 1-1/2 Tbl. diced red bell pepper
  • 2 Tbls. fresh flat leaf parsley

Step 1

Empty garbanzo beans (including juice) into a bowl. Microwave for 30 seconds to warm the beans.

In a food processor, add chopped garlic, parsley, red bell pepper, and lemon juice.

Scoop the beans from the bowl, and add to the processor, but don't drain the juice. You should have a bit of juice (about a tablespoon) that gets added to the processor.

Process ingredients for about 30 seconds. Add the Tahini paste, and about a tsp. of kosher salt.

Process for 2-3 min. Taste it and add salt as needed.
Process again for another 2 minutes or until the hummus is very smooth. Add about 1 tsp. of olive oil to help smooth it out, if needed.
