5 Tbl salad oil
1# spinach, coarsely chopped
4 med. size zucchini, diced
1 cup green bean, cut in 1" pieces
1 cup chopped onion
1/8 tsp finely chopped garlic
2 tsp. basil
1 tsp sale
1/4 tsp black pepper
Dash of nutmeg
1/4 cup fresly grated Parmesan cheese
4 eggs, lightly beaten
Preheat oven to 350
Heat 3 Tbls oil in skillet
Add spinach and cook until wilted, adding more oil if necessary
Place spinach in a sieve and press out liquid.
Add remaining oil to skillet and cook zucchini, green beans and onion over low heat, stirring occassionally until zucchini is tender, but crisp (7-9 minutes)
Combine cooked veggies in a bowl.
Add garlic, basil, salt, pepper and nutmeg.
Spoon into a buttered 2 qt. casserole.
Pour eggs over vegetables, sprinkle with cheese and bake 40 minutes.
Serve immediately.
