- 1 stick of butter, melted
- 3 egg yolks
- capful of lemon juice
- salt and pepper to taste

Step 1
Melt butter and let cool to warm but not hot. Put egg yolks in mixing bowl, add butter, and blend with electric hand mixer until thickened. Go lightly so that the mixture doesn't become too thick. Add lemon juice and spices.
