Ingredients
- 2 lbs yellow summer squash, washed and sliced
- 2 tsp salt
- 1/4 tsp ground black pepper
- 1 cup cornmeal
- 1 cup self-rising flour
- 1 cup vegetable oil
- 1/4 cup margarine

Step 1
1. Place squash slices in a large bowl. Add salt and pepper; tossing gently to coat squash.
2. In a separate large bowl, combine cornmeal and self-rising flour. Add squash; tossing gently to coat.
3. Heat vegetable oil and margarine in a large cast-iron skillet over medium-high heat. Fry squash in 3 or 4 batches until golden brown, turning several times to ensure even browning. Drain on paper towels.
