Ingredients

  • 1 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tbsp red wine vinegar
  • 1 tbsp fresh lemon huice
  • 3/4 tsp Worcestershire sauce
  • 3/4 tsp Tabasco sauce
  • Salt and freshly ground pepper
  • 2 # bite size Romaine lettuce
  • Supercrisp Parmesan Croutons
  • Parmesan Croutons (makes 4 cups)
  • 3 tbsp unsalted butter
  • 1 tbsp extra virgin olive oil
  • 4 finely chopped clove garlic
  • 3/4 # loaf of focaccia cut into 3/4" dice, crusts removed
  • 1/4 cup Parmesan cheese
  • Pinch of sugar
  • Salt and freshly ground pepper

Step 1

Salad:
In a small bowl,whisk the mayonnaise with the mustard, garlic and Parmesan cheese, vinegar, lemon juice, Worcestershire sauce and Tabasco. Season with salt and pepper. In a large bowl,toss the lettuce with the croutons and 3/4 of the dressing. serve right away and pass remaining dressing.

Croutons:
Preheat oven to 300. In a small skillet, melt butter in the olive oil. Add the garlic adn cook over moderatley low heat until fragrant, about 2 minutes. Scrape the butter into a large bowl and toss with the diced bread. Add the Parmesan cheese and sugar and season with salt and pepper. Spread the croutons on a large rimmed baking sheet and bake for 45 minutes, stirring occasionally until golden and crisp. Can be stored for 3 days in airtight container.
