Ingredients
- CRUST:
- 1 1/2 cups breadcrumbs
- 1/2 cup ( 1 stick) butter, melted
- 3 TBSP freshly grated parmesan cheese
- FILLING:
- 3 8 OZ Pkgs cream cheese, room temperature
- 1/4 tsp lemon extract
- 5 eggs, room temperature
- 1/4 cup, (1 stick) butter, melted
- 3 TBSP grated onion
- 4 cups sour cream, room temp.
- 7 oz black lumpfish caviar, rinsed and drained

Preparation
Step 1
Line bottom of 10” springform pan with wax paper.
Mix crumbs, melted butter, and parmesan in small bowl. Press crumbs firmly against bottom and sides of pan. Refrigerate while preparing filling.
Preheat oven to 350. Mix cream cheese, eggs, onion, and lemon extract in food processor until smooth. Blend in butter. Transfer to a bowl.
Stir in sour cream. Fold in caviar.
Spoon filling into chilled crust. Bake 45 minutes.
Turn off oven.
Let cake stand in oven 15-20 minutes; filling will appear unset. Let cool to room temperature.
Cover with plastic wrap and refrigerate at least 12 hours before serving
