Ingredients

  • Filling:
  • 3 tablespoons lightly salted butter
  • 4 ounces peanut butter bits
  • 3/4 cup finely ground chocolate cookie crumbs
  • 3/4 cup peanuts, chopped
  • 2 ounces semi-sweet chocolate
  • 4 ounces peanut butter bits, melted
  • 2 packages (8 ounces) cream cheese
  • 1 can (about 1 1/3 cups)sweetened condensed milk
  • 2 teaspoon Fruit Fresh
  • 2 tablespoons fresh lemon juice
  • 1/4 cup peanut butter bits

Step 1

To make crust: In top of double boiler, over simmering water, melt butter and peanut butter bits. (Or use saucepan on heat diffuser, or melt in microwave oven.) When melted, remove from heat. Whisk into a smooth, even mass. Measure cookie crumbs into food processor. Add nuts. Process together for 5 second intervals, checking texture frequently. (It should be fine and dry, but not mushy.) Add crumb-nut mixture all at once to butter mixture, Using fork, mash together until well blended. Place in springfoam pan. Press some of crust mix no more than 1 1/2 inches up the sides of springform pan. Spread remainder over bottom. Using back of soup spoon, press and smooth crust.
To make filling:
In top of double boiler over simmering water, melt chocolate and peanut butter bits separately. (Or use saucepan on heat whip cream cheese on highest speed for 5 minutes. Add condensed blended. (A food processor can be used, whipping cream cheese and condensed milk with an on-off pulse 25 times and then for 10-15 seconds more, until completely smooth and blended. Remove 1 cup of batter. Reserve. Add fruit fresh dissolved in lemon juice and melted peanut butter bits to batter. Blend well. Fold whole peanut-butter bits into batter.
To bake cheesecake: Pour batter into crust. Using rubber spatula, spread batter carefully until it is level and pressed firmly against crust. Return reserved plain batter to unwashed processor or mixer bowl. Blend in melted chocolate. Using metal spatula or knife, spread chocolate batter evenly over peanut butter batter. Refrigerate to set.
