Ingredients

  • 1 (8 oz.) can crushed pineapple
  • 1/2 cup all-purpose flour
  • 1/3 cup firmly packed brown sugar
  • 1/4 tsp. ground cinnamon
  • 1/2 cup margarine, melted and divided
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 3/4 cup milk

Preparation

Step 1

1. Drain pineapple; reserving 1/4 cup juice.
2. Combine 1/2 cup flour, brown sugar, cinnamon and 1/4 cup margarine; stir well.
3. Combine next four ingredients. Combine egg, milk, remaining 1/4 cup butter and reserved pineapple juice; stir well.
4. Make a well in center of dry ingredients; add liquid ingredients, stirring just until the dry ingredients are moistened.
5. Spoon batter into greased and floured muffin pans, filling half full.
6. Spoon pineapple over batter and sprinkle with cinnamon mixture.
7. Bake at 375 degrees F. for 30 minutes.
