Ingredients

  • 1 pkg (8 squares) Semi-sweet Chocolate
  • 1/4 tsp Peppermint extract
  • 1 sleeve Ritz Crackers (about 35 crackers)
  • 1 Peppermint candy cane (6-inch)-crushed

Preparation

Step 1

Microwave chocolate in a small microwaveable bowl as directed on package. Stir until completely melted. Blend in extract.

Dip crackers into melted chocolate, completely coating crackers with chocolate.

Carefully scrape off excess chocoate. Place on wax paper-covered cookie sheets; sprinkle with crushed candy (I put one candy cane in a plastic bag and crush it with a rolling pin).

Refrigerate 30 minutes or until chocolate is firm. Store in air tight container in refrigerator.

Variation: For a chocolate-peanut butter cookie, omit peppermint extract and candy cane. Spread each cracker with a thin layer of peanut butter before dipping in melted chocolate.

For darker chocolate recipe: Melt 5 squares of semi-sweet chocolate and 3 squares of dark chocolate; just so you use a total of 8 squares.
