Cake: Angel Food

This is a standard recipe with a little added flavor because of the lemon zest. This recipe calls for a total of 2 cups of superfine sugar, but divided.

Ingredients
- 1 1/3 cups cake flour sifted
- 1/2 cups superfine sugar
- 1 1/2 cups egg whites
- 1 1/2 teaspoon cream of tartar
- 1 1/2 cups superfine sugar
- 3/4 teaspoon vanilla
- 1 whole zest of lemon or 1 1/2 teaspoon zest

Preparation
Step 1
Preheat oven 350*
Sift together 1/2 cup sugar and 1 1/3 cups cake flour.
Beat egg whites with 1 1/2 teaspoons cream of tartar. Beat until just soft peaks form. Add zest and vanilla to whites. Turn on mixer to whip and slowly add 1 1/2 cups superfine sugar. Beat until semi firm but soft looking peeks.
Fold in sugar and flour mixture.
Put in tube pan (do not grease the pan) Bake for 35 to 40 minutes.
