Ingredients

  • 3/4 cup (175 ml) margarine or butter
  • 3/4 cup (175 ml) sugar
  • 1 large egg
  • 2 tsp (10 ml) lemon rind
  • 1 tsp (5 ml) lemon juice
  • 2 cups (500 ml) all-purpose flour
  • 1 tsp (5 ml) baking powder
  • 1/2 tsp (2 ml) salt
  • 2 cups grated zucchini
  • 1 cup (250 ml) coconut
  • 1/2 cup (125 ml) chopped walnuts
  • 1/2 cup (125 ml) raisins

In large bowl, cream margarine and sugar until light and fluffy. Add egg, lemon rind and lemon juice; beat until smooth. In small bowl, combine flour, baking powder and salt. Stir flour mixture into creamed mixture. (It will be crumbly). Add zucchini, coconut, walnuts and raisins. Mix well. Drop batter by heaping teaspoonsful on greased baking sheet. Bake at 375 F (190 C) for 15 to 20 minutes or until golden brown.
