Ingredients
- 1 cup bran
- 2/3 cup whole wheat flour
- 2/3 cup all-purpose flour
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 1 large egg
- 1/3 cup brown sugar
- 1/4 cup corn oil
- 2 tsp fresh grated orange peel
- 1 tsp cinnamon
- 1/4 tsp ginger
- 1 cup 1% fat milk
- 2/3 cup grated zucchini (1 small zucchini)
- 1/2 cup raisins

Step 1
Heat oven to 400 F. Line a 12-cup muffin pan with 2 ½-inch foil cups. (Do not use paper – muffins will stick). In a large bowl mix bran, whole wheat flour, white flour, baking powder and salt until well blended. In a separate bowl mix egg, sugar, oil, orange peel, cinnamon and ginger with a fork or wire whisk until blended. Whisk in milk. Stir milk mixture and grated zucchini into bran mixture just until dry ingredients are moistened; Do Not Overmix. Stir in raisins. Fill muffin cups with batter. Bake about 20 minutes.
