Ingredients
- 6 potatoes (any kind) washed, not peeled, from your garden, preferably
- I leek, both the green and white parts, sauteed, (or use onion, raw,)
- 2-3 cloves garlic
- 1/2 c veganiaise
- 1/2 c organic dill pickle brine
- 4-5 fresh basil leaves
- 1/2 t oregano
- 1 t himalayan pink salt
- fresh black pepper
- mustard to taste
- 2 stalks celery sliced thin or old bay seasoning
- dill, shredded carrot, parsley, sliced kale as desired
- cooked edamama or cubed firm tofu (soy MUST be organic or it's GMO!)

Step 1
boil the potatoes
sauter the leeks of slice the onions
chop garlic and basil
mix everything together
add the potatoes while they're still warm so they suck up the flavors
refrigerate or eat right away
