Ingredients
- 12 small red potatoes
- 1/4 cup olive oil
- 1 teaspoon garlic salt
- pepper
- 1 package cream cheese at room temperature
- 1 package dry ranch dressing mix
- 1 package bacon

Preparation
Step 1
Wash potatoes, leave skin on. Poke each with fork and place on microwave safe plate with 2 tbsp water on the bottom. Cover with plastic wrap and cook in microwave until you can prick with fork easily. May have to do two batches. Meanwhile, mix olive oil, garlic salt and pepper togeter and put aside for later use. Cook bacon and crumble.
Cut cooked potatoes in half and carefully spoon out some of the potato from the center. Place spooned potato in seperate bowl for later. Place halved potatoes face up on baking dish. Brush tops with olive oil mixture and put into oven and broil until tops turn a golden brown.
Meanwhile, blend together the reserved potato, cream cheese and ranch packet.
After potato halves have cooled, spoon into each. Sprinkle with crumbled bacon and chill before serving
