Ingredients
- 3/4 cup sugar
- 1/3 cup vegetable oil
- 3 large eggs
- 1/2 teaspoon vanilla
- 2 1/3 cups biscuit mix (such as Bisquick)
- 1 1/2 cups mashed bananas
- 1/2 cup chopped walnuts

Preparation
Step 1
1. Preheat the oven to 350F. Grease 18 muffin cups.
2. Combine the sugar and vegetable oil in a large bowl. Beat with an electric mixer set at medium speed until well blended.
3. Beat in the eggs and vanilla. Add the biscuit mix and bananas and mix well. Stir in the walnuts.
4. Fill the prepared muffin cups two-thirds full with the batter. Bake until a toothpick inserted in the centers of the muffins comes out clean, about 17 minutes.
Variation
For a wonderful flavor twist, substitute 1/2 cup chopped pecans for the walnuts and add 1/2 cup dried cranberries to the batter.
