Casserole: Breakfast Supreme

I make this when the kids are all in town or when the San Fransisco family is visiting us in Florida. Everybody loves this dish and it's always gone by noon.

Ingredients
- 1/2 stick butter
- 1 small onion or 1/2 large onion, chopped
- 1 small red pepper, chopped
- 2-3 medium seeded tomatoes, chopped or quartered cherry tomatoes or halved grape tomatoes
- 1 24 ounce bag frozen hash brown potatoes, cooked
- 12 eggs
- 1/2 to 1 pound cubed ham, thin sliced ham, crumbled bacon or sausage
- 3 cups blend of American and Cheddar cheese, shredded

Preparation
Step 1
Preheat oven 350*
Melt butter and place in bottom of 9 x 13 baking pan.
Spread cooked potatoes in bottom of pan. Sprinkle chopped vegetables over potatoes. Add salt and pepper to taste. Sprinkle meat over potatoes and vegetables.
