  • For the mint-flavored simple syrup:
  • 1/2 cup sugar
  • 1 bunch fresh mint, leaves only
  • For the toddy:
  • 2/3 cup freshly brewed blackcurrant tea or other hot tea of your choice
  • 3 tablespoons Irish whiskey
  • 1 lemon slice, for garnish

Step 1

To prepare the simple syrup, bring 1 cup water to a boil in a small saucepan and add the sugar and mint leaves. Turn off the heat, stir to dissolve the sugar, and let the mint leaves sit in the syrup for 1 hour. Strain the syrup, discarding the mint leaves, and store the syrup in an airtight container in the refrigerator.

To prepare the toddy, pour the tea into your favorite mug or a tall glass. Warm the whiskey in the microwave for 30 seconds and add it to the tea. Stir in the 1 tablespoon of the simple syrup. Garnish with the lemon slice.
