Ingredients
- 1 lb ground beef
- 3/4 can refried beans
- 3 Tbsp chopped onion
- 2 tsp oregano
- 2 pkg taco seasoning mix
- 4 cups shredded cojack cheese
- 1 pkg manicotti shells
- 1 (15oz) can tomato sauce
- 2 cups water
- 1/2 cup sour cream

Mix together ground beef, beans, onions, oregano, 2 1/2 Tbsp of taco seasoning, and 1 1/2 cup cheese. Stuff meat mixture into manicotti shells. Arrange stuffed manicotti shells in a 9 x 13 baking dish. In a separate bowl, mix tomato sauce, 1 cup water, and remaining taco seasoning until hot. Pour tomato sauce mixture over manicotti shells, ensuring shells are evenly coated with sauce mixture. Cover baking dish with aluminum foil and bake at 400 for 50 mins. After the first 20 mins, remove from oven, add remaining 1 cup water, and gently turn over manicotti shells. Recover and place back in oven. After the next 20 mins, remove from oven and gently turn over manicotti shells and sprinkle with remaining shredded cheese. Recover and place back in oven. Dish is done when cheese is melted and manicotti's are cooked through. Serve with sour cream.
