Ingredients
- 1 quart fresh apple cider
- 1 tablespoon light brown sugar
- 1 cinnamon stick
- 1 teaspoon cloves
- 1 teaspoon ground allspice
- 1/8 teaspoon ground mace
- Pinch of kosher salt
- Pinch of cayenne pepper

Preparation
Step 1
Combine the apple cider, sugar, cinnamon, cloves, allspice, mace, salt, and cayenne in a large saucepan and bring just to a simmer, stirring occasionally. Reduce the heat to low and simmer for 2 minutes. Remove from the heat and let sit for 1 hour to macerate.
Strain the mixture into a clean saucepan (discard the solids) and return to a simmer. Serve warm in tall coffee mugs.
