Ingredients

  • 2 1/4 cups sifted all-purpose flour
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 cup soft butter
  • 1 cup sugar or 3/4 cup honey
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1 cup chopped dates or 1 cup raisins, optional
  • 2/3 cup chopped maraschino cherries, optional

Preparation

Step 1

Sift flour, baking soda and salt together 3 times. Cream butter until light. Gradually add sugar or honey to butter, followed by eggs and vanilla. Mix in dry ingredients. Add grated zucchini and grated carrots. Fold in the maraschino cherries. Drop by teaspoonsful 2 inches apart on 2 lightly greased baking sheets. Bake in a preheated 375 F oven 8 to 10 minutes or until edges are delicately brown.
