Ingredients

  • 1 (15 oz) can Mexican-style beans in sauce
  • 1/2 onion, chopped
  • 1 (4 oz) can mild green chiles
  • 1/2 tsp chili powder
  • 1/2 cup oat bran
  • 2 egg whites
  • 1/2 cup shredded skim or nonfat cheddar cheese

Step 1

Drain the beans. Place all ingredients in a food processor and process into a thick mixture. Remove mixture to a bowl, cover, and chill at least 1 hour. Wet your hands and divide mixture into 4 large patties. (Wetting your hands will prevent the mixture from sticking). Spray a baking sheet with vegetable food spray. Place the patties on the sheet and spray the tops with food spray. Bake in a 350 F oven about 30 minutes or until browned. Serve on a bun on in a pita bread pocket with salsa, shredded lettuce, and chopped tomatoes.
