Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups honey or 2 1/2 cups brown sugar
  • 2 cups peeled and grated zucchini
  • 2 cups peeled and grated carrots
  • 2 tsp vanilla
  • 1 tsp baking soda
  • 3 tsp cinnamon
  • 1/4 tsp baking powder
  • Dash nutmeg
  • 1 cup nuts, optional
  • 2 1/2 cups whole wheat flour or 3 cups flour
  • 1 tsp salt

Step 1

Beat eggs, add oil and sugar or honey. Stir in grated zucchini and carrots. Add vanilla. Sift together the flour, baking powder, baking soda and salt. Add spices. Pour into 2 greased loaf pans. Bake at 350 F oven for 1 hour 10 minutes.
