  • 4 small pieces natural wood: mesquite, hickory, oak recommended (if using chips, they must be soaked in water first to inhibit fast burning
  • 1 dozen raw oysters on the half shell
  • dill butter

Preparation

Step 1

1. Prepare white hot coals or preheat a gas grill to high.
2. Using a grill fork or similar heatproof tool, carefully lift the hot grate slightly and place only 3 or 4 pieces of wood all around the edges of the grill, directly over the prepared coals or hot ceramic briquettes.
3. Before the wood catches fire, quickly place the opened oysters face up in the center of the grill, shut the lid, and let cook for 3 minutes at most. (be careful not to put the oysters directly over any wood pieces or they will burn.)
4. Remove and top each grilled oyster with a small part of dill butter and serve as it is melting and bubbly hot.
you can easily open oysters by placing them in a 400 oven for a couple of minutes to loosen them up or pry open with an ordinary pop bottle opener.
