Ingredients
- 2 cups uncooked rolled oats
- 3 cups grated zucchini
- 1/2 cup grated Swiss or cheddar cheese
- 1/2 cup soy meal or 1/2 cup wheat germ
- 2 eggs, beaten
- 1/2 cup chopped onion
- 3 tbsp oil
- 1/2 cup toasted sunflower seeds
- 1/4 tsp nutmeg
- 1 tsp salt

Step 1
Preheat oven to 375 F. Sauté onion in oil until soft. Combine with other ingredients and press into a well greased loaf pan. Bake for 30 minutes.
