Ingredients

  • Bars:
  • 3/4 cup margarine, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 3/4 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups unpeeled shredded zucchini
  • 3/4 cup coconut
  • 3/4 cup raisins
  • 3/4 cup crushed pineapple, drained
  • Powdered Sugar Glaze:
  • 1/4 cup margarine
  • 1 cup powdered sugar
  • 1 tbsp pineapple juice

Step 1

Bars: In large bowl of mixer, beat butter until creamy. Add sugars and mix until light and fluffy. Add eggs, one at a time, beating after each addition. Blend in vanilla. Sift together flour, baking powder and salt. Add sifted dry ingredients to creamed mixture. Stir in shredded zucchini, raisins and crushed pineapple. spread evenly in greased and floured jelly roll pan. Bake at 350 F about 40 minutes. Cool slightly, then drizzle on Powdered Sugar Glaze.

Glaze: Combine margarine, sugar and pineapple juice, beating until smooth. When cool, cut into 1 ½-inch bars.
