SNACK CAKE - CHOCOLATE OATRAGE 0 Picture

Ingredients

  • 2 sticks butter, softened
  • 1 1/3 C. quick or old-fashioned Quaker Oats, uncooked
  • 1/2 C. flour
  • 1 C. firmly packed brown sugar
  • 2 eggs
  • 1/2 C. chopped walnuts, optional
  • 1 tsp. vanilla extract
  • 12 oz. pkg semi-sweet chocolate morsels, divided

Preparation

Step 1

1. In a large mixer bowl, combine butter, oats, flour, brown sugar, eggs, walnuts and vanilla. Beat 3 minutes at medium speed until mixture is light and fluffy. Stir in 1 C. chocolate morsels.

2. Spread batter in 8 inch square microwave safe baking dish; cover dish with waxed paper.

3. Microwave on High Power 4 minutes, rotate dish 1/4 turn. Microwave on HIGH Power 4-5 minutes longer or until top of cake appears dry and bottom of cake is an even color.

4. Sprinkle remaining 1 C. chocolate morsels over top of warm cake. Let stand 10 minutes, then spread chocolate evenly over cake. Cool directly on counter top. Cut into serving pieces.
