Ingredients
- 3 Tbsp. olive oil
- 1 tea. grated lemon zest
- 2 Tbsp. lemon juice
- 2 tea. Dijon mustard
- 1/2 tea. sugar
- 1/4 tea. salt
- 1/8 tea. pepper
- 5 cups baby spinach leaves, about 5 oz.
- 1 1/2 cups thinly sliced, poeeled, seeded cantaloupe wedges
- 1 cup seedless grapes, halved
- 1/2 cup crumbled feta cheese
- 13 cup packed fresh mint leaves
- 1/4 cup thinly sliced red onion

Step 1
In a large bowl, whisk together oil, lemon zest and juice, mustard, sugar, salt and pepper. Add spinach, cantaloupe, grapes, cheese, mint and onion; lightly toss to combine.
