Tami Himmelberger's recipe. Like peanut butter roll, but made with left over mashed potatoes.

Ingredients

  • 1 medium potato, peeled and cubed
  • 4 - 2 lb. bags 10X sugar
  • large jar of smooth peanut butter

Preparation

Step 1

Place potato in pan of water. Bring to a boil until potato is soft to mash. Mash potato while still warm.

Slowly add 10X sugar to potato. Mixtgure will become very runny. Keep adding 10X sugar until consistency of a dough. Knead mixture until there is no shine on the dough.

Roll out on sugared waxed paper. Spread with peanut butter and roll up. Cut in slices.
