  • 6 cups sliced zucchini, 1/2-inch thick (1 1/2 to 2 lbs)
  • 3/4 lb mozzarella cheese, sliced 1/4-inch thick
  • 3/4 cup tomato sauce

Step 1

In a heavy 10-inch skillet heat ½-inch of oil over moderately high heat. Add a single layer of zucchini and cook 1 minute on each side, until lightly browned. Drain on paper towels. Repeat with remaining zucchini. Heat oven to 400 F. Arrange about 1/3 of the zucchini in the bottom of an 8-by-4-by-2-inch loaf pan; top with ¼ of the cheese and 1/3 of the sauce. Repeat layers twice more; top with remaining cheese. Bake 30 minutes, until cheese has melted and casserole is hot. Let stand 5 minutes before serving.

Microwave Instructions: Arrange a single layer of zucchini in a 2-quart oblong baking dish (omit oil). Cover and cook until tender, about 8 minutes on (High), turning dish halfway around after 4 minutes. Remove and drain; repeat with remaining zucchini. In a 9-inch square baking dish assemble casserole as directed above. Cook 3 minutes on (High) and then about 15 minutes on (Medium), turning dish every 5 minutes. Let stand about 5 minutes.
