Ingredients

  • 1 cup brown sugar
  • 3 eggs
  • 2/3 cup melted shortening (Crisco)
  • 1 cup zucchini, unpeeled and grated
  • 3 cups flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1/2 cup walnuts, chopped

Step 1

Beat eggs, add sugar and shortening together. Beat at high speed for 3 to 4 minutes. Sift flour, baking powder and salt together. Add these dry ingredients to the creamed mixture. Stir in the grated zucchini and blend well. Add the chocolate chips and chopped walnuts. Preheat oven to 350 F. Grease a pan 13-by-9-by-2-inch.

If above batter seems too thick, thin a little with milk.
