Ingredients
- 1 lb. ground beef
- 1 T olive oil
- 1 C minced onion
- 1 clove minced garlic
- 1 C diced carrots
- 1 C sliced clelery
- 29 oz. chicken broth
- 1 16 0z. can crushed tomatoes
- 1/2 t thyme
- 1/2 t salt
- 1/4 t pepper
- 3 C cooked noodles
- 1/4 C chopped parsley

Preparation
Step 1
In Dutch oven, cook ground beef, breaking up meat, til browned. Remove from & set aside.
Add oil, carrots, onions, celery & garlid; cook til tender, @ 5 min.
Add broth, tomatoes, thyme, salt & pepper and beef. Bring to boil; reduce heat, cover & simmer 20 min. Just before serving, stir in noodles & parsley & heat thru.
