Ingredients
- Pulled Pork
- 8 cups chicken stock or water
- 1 (5-pound) boneless pork butt or shoulder
- favorite pork rub
- 8 to 12 outdoor buns
- BBQ Sauce
- 2 tablespoons canola oil
- 2 small Spanish onion, finely diced
- 2 jalapeno, finely diced (with seeds)
- 4 tomatoes, coarsely chopped
- 2 diced tomatoes, 15-ounce can
- 1 tomato paste, 6-ounce can
- 2 cups cider vinegar
- 1/2 cup honey
- 1 cup light brown sugar
- 2 tablespoons dijon-style mustard
- 4 tablespoons Worcestershire sauce
- 2 tablespoons soy sauce
- salt

Preparation
Step 1
Pulled Pork
Apply rub on pork and let sit for an hour or so in refrigerator.
Sear entire pork shoulder. Place in slow-cooker with chicken stock. Slow-cook for 6–8 hours on low.
Separate meat with two forks. Combine with BBQ Sauce.
BBQ Sauce
Heat oil in a medium saucepan. Add the onion and jalapeno and cook until soft.
Add the fresh tomatoes, canned tomatoes and juices, vinegar, honey, brown sugar and Worcestershire sauce, and cook until the sugar has completely melted and the sauce is slightly reduced and thickened.
Season with salt, to taste. Add the shredded pork and stir to coat.
Optional: serve with Pickled Jalapenos
