Step 1
3/4 c. Brown sugar
Juice from No.2 can of pineapple [slices]
[Arrange pineapple slices in bottom of large round cake pan.)
Cook pineapple juice & brown sugar together for 5 mins. Reserve 5 Tbsp of juice for batter. [Pour remaining juice over pineapple slices in cake pan.)
** Batter **
1 c. flour
1/8 tsp salt
3 eggs, separated
1 c. sugar
5 Tbsp pineapple juice [from above]
Sift flour & [1 1/2 tsp] b. powder & salt together.
Beat egg yolks until light - adding sugar gradually.
Add juice and sifted flour.
Fold in stiffly beaten egg whites.
Pour batter over pineapple in pan.
Bake 375 for 30-35 mins.
