Grilled Pineapple Pancakes

This summer breakfast is the perfect twist on the classic flapjack. By grilling the fruit you bring out their natural sweetness. Try it with different summer fruits as well.

Ingredients
- 1/2 small pineapple
- 1 Tbs. olive oil
- 1 1/2 C. flour
- 3 1/2 tsp. baking powder
- pinch of salt
- 1 tsp. sugar
- 1 1/4 C. milk
- 1 large egg
- 3 Tbs. butter

Preparation
Step 1
1. Slice your pineapple into chunks. Drizzle olive oil on them and grill them or bake them to bring out their sweetness. Grill until golden brown.
2. In a large mixing bowl add the flour, baking powder, salt, sugar, milk, egg and butter. Mix until creamy.
3. Gently stir in the grilled pineapple.
4. On a heated skillet add a little bit of oil to keep the pancakes from sticking.
5. Pour 1/4 C. of batter on the skillet. Flip when bubbles appear on top.
