MEXICAN PINEAPPLE CAKE

Recipe from Juanita Hart who lives in Dad's building (and looks like Aunt Edna). She made this for one of their get togethers and it was awesome!!

Ingredients
- ICING:
- 2 eggs
- 2 cups white sugar
- 2 cups flour
- 2 tsp. baking soda
- 1 - 2oz. can crushed pineapple
- pinch of salt
- 1/2 tsp. vanilla
- 1 cup pecans or walnuts
- 1 cup raisins
- 1 stick butter
- 4 oz. Philadelphia cream cheese
- Mix well. Add 1 cup Confectioners' sugar and 1 tsp. vanilla

Step 1
Grease pan. Cream sugar and eggs. Add flour, salt baking soda. Mix in vanilla and pineapple. Bake at 300 for 45 minutes. Let cool before icing.
