Ingredients
- 2 3-oz. pkgs. cream cheese, softened
- 1 egg
- 2 T. Cointreau or other orange liqueur or apple juice
- 1 T. sugar
- 2 C. all purpose flour
- 1 C. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 C. apple juice
- 1/4 C. butter, melted
- 1 beaten egg
- 1 1/2 C. chopped fresh cranberries
- 1/2 C. chopped walnuts

Preparation
Step 1
1. Preheat oven to 350°F.
2. Grease and lightly flour a 9x5x3 inch loaf pan. Set aside.
3. In a small bowl, beat cream cheese with electric mixer till light and fluffy. Add 1 egg, Cointreau and 1 T. sugar. Beat till well combined.
4. In a large bowl, stir together the flour, 1 C. sugar, baking powder, baking soda and salt. Stir in apple juice, butter and beaten egg. Fold in the cranberries and walnuts. Spoon half of the batter into the prepared pan. Spoon cream cheese mixture evenly over the batter. Top with the remaining batter.
5. Bake for 65-75 minutes. Cool for 15 minutes in the pan on a wire rack.
6. Remove from pan and cool on rack. When completely cool, wrap tightly in clear plastic wrap.
