Ingredients

  • 6 medium zucchini
  • 1/2 onion, chopped
  • 1/4 cup chopped parsley
  • 4 celery stalks, chopped
  • 2 tbsp margarine
  • 1 1/2 cups low-fat cottage cheese
  • 1/3 cup buttermilk
  • 2 eggs, beaten
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 tsp oregano
  • 1/2 cup grated cheddar cheese or 1/4 cup grated Parmesan cheese
  • Whole wheat bread crumbs, optional
  • Dash garlic powder, optional

Preparation

Step 1

Preheat oven to 350 F. Sauté onions and celery in margarine. Stir into cottage cheese. Add buttermilk, beaten eggs and seasonings, including garlic. Stir in parsley. Slice zucchini in half lengthwise. Place halves, with cut-side up, in a greased baking dish. Cover and bake until half done (about 15 minutes). Spread with cottage cheese mixture and bread and bake again, uncovered, until done. Sprinkle with grated cheese and let stand a few minutes.
